I would argue that, yes, making a single car is subtractive work. There is a specific and finite list of tasks that have to be done to make one car. It doesn’t help to make ten steering wheels for one car. If you’re working in a mass assembly plant, sure, go ahead, they’ll all get used. But otherwise, each piece of work needs to support a single clearly defined goal - a working car. More is not always better.
